The Browne CT84122 - Candy/Jelly/Deep Fry Thermometer features a 2-1/8 inch dial for easy use and visibility while cooking. It measures 12 inches long for safe use to keep the thermometer away from hot product. It is designed for use in temperatures between 50 degrees F to 500 degrees F. This thermometer has a very thin and long shape and is most often used when making hard and soft candy such as brittle, pralines, toffee, fudge and more. While proteins like chicken and steak are typically cooked between 130 degrees F to 175 degrees F, candy requires cooking sugar at higher temperatures of 300 degrees F, and deep-frying requires hot oil temperatures at 375 degrees F.
