The Matfer Bourgeat Exopan Steel Tartlet Mold is a high-performance steel mold with fluted edges, designed for creating individual cakes, tarts, and quiches. Manufactured in France, this mold is made of Matfer's Exopan material, a fine steel with a nonstick coated interior and a protective enameled exterior, that are PFOA free. Exopan combines the quality of cooking in tinplate with the benefits of a nonstick surface, contributing to overall development of product color during baking. Its nonstick surface eliminates greasing resulting in a clean release during depanning. The protective enamel ensures durability that will withstand heavy use in professional kitchens. Freezer and oven safe, Exopan molds have a resistance to temperatures ranging from -4°F to 482°F. This mold comes in a pack of 12. Available in a choice of four sizes; each pack is sold separately.
