The Winco RD-5P White Plastic Dough Docker features a 5" wide head. It is designed with a plastic barrel that features 6 independently spinning wheels that easily and efficiently perforate even the largest sheet of pizza, pie or tart dough. The plastic dough docker is Ideal for piercing dough to prevent bubbles from forming during baking. It is constructed of durable plastic for a long service life and high volume use. This plastic dough docker will resist breaks and cracks, and will keep its same shape year after year. A roller docker, rolling docker, dough docker, roto-fork, or simply docker is a food preparation utensil which resembles either a small, spiked rolling pin, or a small rotary tiller. It is used to pierce bread dough, cracker dough, pizza dough or pastry dough to prevent over rising or blistering. While a dough docker isn't strictly necessary for making pizza, it can be a helpful tool for achieving a more consistent crust.
